Lemon Bars Courtesy of Chris W. Starkenburg, Harley Marine Services 1 16 ounce box angel food cake mix 1 22 ounce can lemon pie filling 1 cup finely shredded coconut 1 lemon, zest (use micro grater) Cream Cheese Frosting, page 108 (add the zest from 1 lemon) 1 bag of lemon drops (for garnish) 1. Preheat oven to 350ºF 2. In mixing bowl, combine cake mix, pie filling, and coconut. 3. Stir until thoroughly mixed. (Do not add any other liquids.) 4. Spread this mixture in a 10”x15” baking pan. 5. Bake for 30 minutes. 6. Let cool before frosting. 7. Frost the top with Cream Cheese Frosting and refrigerate overnight. 8. Cut into 1½”x1½” squares and garnish with lemon drops. |
