Garlic Mashed Potatoes Courtesy of Chris W. Starkenburg, Harley Marine Service 2-3 pounds baby red or yellow new potatoes ½ cup butter ½-¾ cup parmesan or romano cheese, grated 1-2 cups half-and-half 6 cloves of fresh roasted garlic, smashed and diced kosher salt and pepper to taste
1. Place potatoes in a large pot and cover with water, bring to a boil. 2. Reduce heat to a slow boil and cook until they are fork tender. 3. Remove from the heat and let sit for 10 minutes. 4. Drain off water, add butter, cheese and ½ the half-and-half. 5. Mash with potato masher or use hand mixter and add more of the half-and-half to desired thickness. Serves: 8-10
3 cups long grain rice 4½ cups water 1 teaspoon sesame seed oil 8 strips of smoked bacon, diced 6 large eggs, beaten like scrambled eggs 1 Tablespoon sesame seed oil ⅓ cup plus 2 Tablespoons Soy sauce 1½ bunches fresh green onions, finely diced
1. Rinse and drain rice 2 times before adding water and sesame oil into your automatic rice cooker. After rice is cooked open the lid and let the rice cool completely. You can cook the rice in the morning or use left over rice. 2. Heat a large non-stick pan or wok to medium high heat. 3. When the pan or wok is hot, add the diced bacon and continue to stir until crisp. 4. Remove bacon from pan, place in glass dish and leave 2 tablespoons of bacon grease in pan. 5. Place pan back on stove and bring the heat up to medium. 6. Gently pour in scrambled eggs and stir until cooked. 7. Place eggs in the same dish as the cooked bacon. 8. Add 1 Tablespoon sesame seed oil, plus remaining bacon grease into pan and place back on medium high heat. 9. Slowly add the cooled rice while stirring to break up any lumps. 10. Cook and continue to stir for another 5 minutes. 11. Evenly pour soy sauce over the rice and stir until blended. 12. Add the bacon, eggs and ½ of the diced green onions. 13. Place back into the rice cooker to keep warm until you are ready to serve. 14. Continue to stir until well mixed. 15. Garnish with remaining green onions and serve.
